The Cancer Council is a charity close to my heart and I started fundraising for them in 2017 due to my darling husband being diagnosed with Pancreatic Cancer more than nine years ago, he was given one year to live and was one of the lucky ones due to being accepted on a cancer trial. For this we will be forever grateful and Brian has gone on to live a happy life with me.
For many others sadly the survival rate is very low and even though it has climbed from 8% – 12 % there are many that aren’t so lucky. I support Cancer Council yearly raising funds with others throughout Australia for cancer research.
This year I will be hosting my Australia’s Biggest Morning Tea in Yarra Point Business Center. This is a community event and whilst held at Yarra Point it is open to residents of Yarra Point and Yarra’s Edge and friends.
There will be coffee/tea and sweet and savoury delights donated plus a cuppa of coffee or tea. Donations will be greatly received upon entry.
We will be holding a raffle for attendees so do bring some cash with you. Raffle tickets will be one for $5 or 5 for $20.

Here’s how you make it…
Serves: 8
Dietary fibre per serve: 4g Preparation time: 30 minutes Cook time: 45 minutes
Ingredients
• 5 eggs
• 2 medium zucchinis, grated
• 200g butternut pumpkin, grated • 1 tin reduced-salt corn kernels
• 1 medium brown onion, peeled and diced
Method
1. Preheat oven to 200°C (180°C fan forced) for 10 minutes.
2. Whisk eggs in a medium bowl.
3. In a large bowl combine vegetables, egg, flour, cheese, herbs and pepper.
4. Add eggs and stir mixture until well combined.
Alternatives
• 2 tsp dried mixed herbs
• 3⁄4 cup wholemeal self-raising flour • 1 cup reduced-fat grated
cheddar cheese
• Pepper to taste
• Olive or canola oil spray
5. Spray a large baking dish with oil. Pour in mixture and flatten.
6. Bake for 40-45 minutes or until firm and golden brown.
7. Rest in the pan for 10 minutes before cutting into 8 slices.
Notes
• Make it gluten-free by substituting 1⁄2 cup of wholemeal self-raising flour for 1⁄2 cup gluten-free self-raising flour.
• Try swapping pumpkin for carrot or sweet potato.
